FROM ETNA TO THE SEA OF THE ISLAND OF CYCLOPS
The heart of our underwater refinement process is our exclusive submerged cellar at 48 meters deep in the waters of the Cyclops Islands Marine Protected Area.
Formed by special metal cages capable of holding about 500 bottles of Etna wine, the cellar rests on the seabed in harmony with the marine ecosystem, not altering in any way the life of its flora and fauna.
To preserve and preserve the precious sunken wine, moreover, an innovative patented capsule to prevent sea water from entering the bottles.

CONSTANT TEMPERATURE
The underwater microclimate is characterized by a constant temperature, a natural air conditioning system ideal for the aging of wines

THE EVOLUTION OF SUBMARINE WINES
In collaboration with the University of Catania we have launched the first study in the world on how underwater wines evolve over time.
The experimental research is based on the constant monitoring of wines in underwater aging, the monthly analysis of marine samples during their stay under water and comparison with twin samples refined with the traditional method.
ENERGY SAVING
The Orygini submarine wine aging method represents a sustainable innovation with significant energy and environmental savings. According to an independent study, about 0.68 kg of CO2 are consumed in the traditional stage of chanting for each 0.75cl bottle. The underwater cantinamento, however, does not require the regulation of temperature and humidity with air conditioning and thermoregulation systems.
This is equivalent to a saving of about 680 kg of CO2 in the atmosphere for every 1000 bottles immersed.According to the first results, also, the underwater wine refines faster, reaching the same results as traditional cantinamento in less time, a zero impact savings with a positive return for the territory and the environment.
